There's actually a thread on here going a ways back with that, from the original "Art of Monsters, Inc." book. Randall started out quite different, going through some really freaky designs, including some that just looked like a fairly ordinary iguana with too many legs(in fact, Randall's design appears to have been MUCH more influenced by iguanas than by chameleons). I know that I've seen some with Randall wearing a bowtie, basically looking as he does now, and I found this Tumblr belonging to artist Nico Marlet, who used to work for Pixar and now works for Dreamworks, who designed the more iguana-like concepts for Randall: artofnicomarlet.tumblr.com/ . If you scroll down you'll see several of his designs for Randall and some of the other MI characters. There are, if I'm not mistaken, some of the concept drawings on the DVD, if my memory serves me correctly, including one in which MIKE is Randall's assistant, and he's handing Randall a towel to wipe sweat from his face(a MOST un-reptilian trait)as he emerges from a Scare.
