I think it's pretty much a fact that 95%* of anime sucks. Or perhaps is something we simply sometimes hard to get into. I am notoriously picky with what I like in this area. I usually give shows a few episodes as a chance, but overall I have to say it's mostly been American cartoons that I've gotten into. Gargoyles, Justice League Unlimited etc....
But what about the animes and mangas you genuinely like? Which have characters and situations you can get into? Which in short don't feel like layer of fanservice after fanservice with a detriment to the plot? (SOME is fine, but let's face it, some go overboard). Also some animes unfortunatly overstay their welcome and drag. I kind of prefer shows with a clear ending and something to work towards.
I'm genuinely curious as to ones people here can recommend, and I know some here have some they like. So what's your favourite and why?
Avatar: TLA is technically not supossed to be an anime, since it's from American creators, but since it's in that style, I say it counts, and it IS my current favourite in that area.
Plus while Ouran Host Club was sometimes OTT it was pretty entertaining sometimes.
So your favourites? Also why?

I like very few anime. Mostly because I always read the manga first and the anime generally disappoints me.
-Wolf's Rain -Full Metal Alchemist: Brotherhood -Paranoia Agent
I've never watched Cowboy Bebop, but it looks amazing.
My favorite manga are Full Metal Alchemist, Tsubasa Reservoir Chronicle (A little disappointing in later chapters, but the first 3/4 is nothing but amazing), and Majin Tantei Nōgami Neuro. My guilty pleasure is Fruits Basket. It was my first manga and I'll always have a soft spot for it.

I personally like any type of anime or manga, don't care what focus the audience is, whether it's kid stuff or adult, if there are characters that catch my attention, an interesting story line, or heck even an interesting world, and maybe some eye candy then it's good for me.
Fav anime for me though has been Full Metal Alchemist, parts of the Naruto series (still haven't seen it in full, damn it), Sonic X, Rozen Maiden, Wolf's Rain, Inuyasha, Trinity Blood, Blood plus, Paranoia agent, and Princess Ressurrection.
Favorite anime films include Advent children and anything from the creator of Spirited Away (I can't remember his name but I've seen a few of his stuff, very awsome)!
Fav manga has been Model, Godchild, Her Majesty's dog, Rozen Maiden (only read the first, want the others), Naruto, anything relating to Vampires Kisses, and...that's all I can think of right now.

You like Paranoia Agent, Mistica Have you watched any of Satoshi Kon's movies? They're all animated as well. I particularly like Tokyo Godfathers. Oh, and FMA! Have you watched Brotherhood? I never really watch the first one, mostly because I dislike the changes from the manga. Who's you're favorite character?

Lol, I do like Paranoia Agent, it had a very interesting storyline to it and I love Maromi. I haven't seen any of his films but I'll try looking into them. Okay, maybe you can let me know, exactly what is FMA Brotherhood, is it a sequel to FMA or a prequel or what, I did try watching one episode and I was confused because the episode I watched looked very similiar to something from the FMA series? As far as the main FMA series, I like the brothers Edward and Alphonse and I do like the one homonculi Wrath, he was my favorite, I also liked Winry, she was awsome! I have mainly seen the anime of it, I do have like the first four issues of the manga though.

It was pretty much made for the manga fans. I'd say the first 13 episodes are the same and after that the story goes a completely different direction. Like, you said Wrath is one of your favorite characters. Well, Wrath isn't in Brotherhood and never existed in the manga. The homunculus Wrath is Fuhrer Bradley, who I believe was Pride in the first anime. Sloth is also a completely different character, as the homunculus are completely different and aren't made in the same was as in the first anime. Brotherhood is actually finished online, if you want to watch it on YouTube.

I almost forgot my newest favorite anime! It's called Baccano! and it's rather short, but great all the same. They have it on YouTube, but the majority is subbed. That usually doesn't bother me, but I'm not fond of the original voice acting and the dub is much better to the point where I bought the DVDs to finish it. My only warning would be that it has a lot of gore.

My first anime was Death Note, read about it in Wikipedia. I've read and watched only around four or five anime shows, because well, they suck. No offense, but 100 "KYAAH!! KAWAII DESU CHA-AN! DESU." per episode is NOT considered plot. Plus most of the time, animes use stereotypes, such as the hikikomori, tsundere and whatnot. There IS one more anime I so liek, toetelly adore, nyah. desu.. ...desu. [well that was awkard and very demo.] It's called "Welcome to NHK" it's about some kind of shut-in gamer who figures out that there is a conspiracy made by the media to make hikikomoris and such. He was somewhat.. well, odd, but a very nice character to watch. I'd rate it a 4/5, compared to death note, I give it a 100/5 Note: there is a charater in Death Note who is freakishly similar to Randall Boggs--his name is Mello, real name Mihael Keehl. I admit, that for a good 4-5 months I had a crush/obsession on this character. You could read about the stuff I've talked about in the following links: en.wikipedia.org/wiki/Hikikomorien.wikipedia.org/wiki/Mello_(Death_Note)en.wikipedia.org/wiki/Welcome_to_the_N.H.K.

True not all of them suck, there are some gems in anime and manga in reality. A LOT of it is bad, but that can be said for a lot of mediums (come on... there are some books which make you wonder how they got published). I just don't like it when they go over the top with the fanservice to the point where there is no plot (I like plot) or its pretty dang obvious the (male) writer is just living vicaciously to unrealistic levels through the main male character (and thus has every woman in a five mile radius fall for him for no apparent reason). Most animes which do this are terrible. But there are good anime. I also like FMA and Death Note. Probably should check out some of the other recommendations here at some stage!

Hoorah! [did you ever notice the similarities between Mello and Randall ] And have you ever heard of Maid-Sama? Usui is SUCH a Gary-Sue. I mean-- his hand was broken, and out of NOWHERE, he pulls out a violin. Come one >: Plot and rationality is very important to me, so watching some.. whimsy anime makes me twitch. I'm very picky about anime so yeah.
